Ochre cliffs plunge into the Atlantic, the path winds between sea and hill. Ciboure appears on the other side of the Nivelle, then Hendaye and the Spanish mountains. Take time to push open a workshop door, exchange a few words, sit on a terrace. Here, you breathe.

Afternoon: Sare and Its Traditions. The prehistoric Grottes de Sare (Sare caves) burrow into the mountain. Inside, temperature drops, humidity, glistening stalactites. The guide tells the millennial history. The real encounter happens at a local producer’s. Ossau-Iraty cheese aged in humid cellars: firm but creamy texture, nutty taste. Morning: Dive into Basque Identity. Bayonne, cultural capital of the Basque Country, vibrates with urban, dense energy. The Basque Museum gathers traditional costumes, agricultural tools, musical instruments, old photographs. You better understand this quiet pride, this language that resists, these perpetuating traditions. Wander through Petit Bayonne: colorful facades squeezed along the Nive, reflections dancing on the water, bridges following one another. The atmosphere is lively, almost festive.

Afternoon: Chocolate and Final Wanderings. Bayonne and chocolate, a love story since the 17th century. Chocolate shops smell of cocoa from the entrance. Behind display cases: tablets with Espelette pepper, hazelnuts, Salies-de-Béarn salt. The chocolate melts slowly, sweet, bitter, comforting.
